"Our plant produces prebaked pizza crusts at a rate of approximately 100,000 units per day. These crusts are manufactured by means of temperature and pressure. Each dough ball is placed under a die that is heated to approximately 500 degrees Fahrenheit and pressed for approximately three to five seconds at 5,000 PSI. The dough balls then are sprayed with a vegetable oil base releasing agent. As a result, a tremendous amount of smoke is generated at the press operation.
This smoke was creating some air quality problems. We consulted with our HVAC contractor, and he recommended enhancing our exhaust system with up-sized fans and hood modifications. As a result, we needed additional make-up air. A Titan Air HVAC unit was sized by the Titan Air engineer and installed in the time frame necessary to match the new exhaust system hood modification.
The air quality problems have been resolved, and our plant now operates in a slight positive pressure mode. The HVAC unit installed outside our plant has satisfied our make-up air needs."
