This smoke was creating some air quality problems. We consulted with our HVAC contractor, and he recommended enhancing our exhaust system with up-sized fans and hood modifications. As a result, we needed additional make-up air. A Titan Air unit was sized by the Titan Air engineer and installed in the time frame necessary to match the new exhaust system hood modification. "Our
plant produces prebaked pizza crusts at a rate of approximately
100,000 units per day. These crusts are manufactured by means of
temperature and pressure. Each dough ball is placed under a die
that is heated to approximately 500 degrees Fahrenheit and pressed
for approximately 3 to 5 seconds at 5,000 PSI. The dough balls are
sprayed with a vegetable oil base releasing agent. As a result,
a tremendous amount of smoke is generated at the press operation.
